Welcome to the home of samurai and the center of Japan’s automotive industry! Aichi Prefecture is best known as the birthplace of many samurai heroes, most notably the nation’s Three Great Unifiers–Oda Nobunaga, Toyotomi Hideyoshi, and Tokugawa Ieyasu. As a result, Aichi was dotted with over 3,600 castles of various sizes and importance. The region prospered as a cultural and economic hub. Today it stands as the country’s leader in aerospace and robotics technologies, as well as automotive, ceramics, and general machinery manufacturing. Its prefectural heart, Nagoya, hosts the headquarters of many famous names such as Brother Industries, Noritake, Ibanez, Lexus, Toyota Tsusho, and others. Aichi is also home to Legoland Japan, and the first Studio Ghibli theme park (opens in 2022).

Hitsumabushi

You can enjoy 3 different flavors of Hitsumabushi; (1) eat as it is, (2) top with condiments such as nori seaweed, chopped green onions, and wasabi, (3) pour green tea or dashi soup over.
